Recipe// Sweet Potato, Red Lentil & Herby Veggie burgers..



It occurred to me the other day that I haven't posted anything to do with recipes for a while, lets be honest.. I didn't really have any inspiration to do one until now..

I gathered some inspiration from some lovely Veggie & Vegan Mamas, although none of us in the Zombiiemummy house are vegetarians or vegans, Meat does put me off & A isn't so keen, so to ensure we're all getting the right balance of nutrients and vitamins (A definitely is!) I got inspiration from the internet also to create these.


Sweet Potato, Red Lentil & Herby Burgers.


You will need:.
  • Red Lentils
  • sweet potato's
  • Red Chilli flakes (optional)
  • Oregano 
  • Fresh Basil (dried will do if not fresh)
  • Oats.
  • Ketchup (optional, just added a little familiarity to it)


Steam the sweet potato's & boil the Red Lentils (half a mug) , add a thick sprinkle of oats, a pinch of red chilli flakes, a few basil leaves (roughly chopped) a tsp of Oregano & a squirt of Ketchup.

Mash with a potato masher

Leave to cool slightly in the fridge

Make patties, to your preferred sizing ( I got quite a few patties out of the 4 sweet potato's I steamed)


I coated a pan ( I used a crepe pan because I was lazy ok!) with olive oil (or whatever you prefer, butter..etc) using a pastry brush & gently fried these in a pan, be careful when turning them over!.


Done!

I served them on sandwich thins on a bed of green beans, with rice on the side. 

They tasted full of flavour, Dean & I really liked them! A tried some but wasn't sure, the accomplishment being he tried them at all really!

My food photography has a lot to be desired.. & I'm definitely not going to win any prizes for it, but hey.. at least its not blurry!.
