Banana & Almond Cupcakes.

This week A & I had a day where we just wanted to bake, I didn't want it to look particularly beautiful, & I just wanted to prepare all the ingredients, & just give him the opportunity to mix,pour & spoon the mixture himself.

Unfortunately I don't have an after picture of the cakes.

3 eggs
1 Tbsp Milk (we used Whole, but this is up to preference)
1Tsp Vanilla extract
150g butter (unsalted)
150g caster sugar
150g self raising flour
1 Tbsp ground almonds
1 Banana.

Preheat oven to 180 C / Gas 4.

Set aside the banana.

Mix all of the dry ingredients together, then in a separate bowl combine all of the wet ingredients.

 Gradually combine wet to dry.

Pour the mixture in the cases, slice some banana, about the thickness of 1cm (doesn't have to be exact!) & push into the mixture inside each cupcake case.

Cook for about 15 minutes. 

To tell if they are cooked poke a chopstick through, if the chopstick is clean they're cooked!.

A & I completely made up this cake recipe on the spot, we ran a blank & didn't want to make ordinary plain cupcakes & I also didn't want to attempt butterfly cakes either.. 

They tasted really nice, not too sweet either,the banana didn't go all dried or burn & the whole process was so easy, & I really really enjoyed taking a step back to let A just mix & pour.. my kitchen was a complete mess, but that doesn't matter, I'm forever cleaning in there, so why not bake up some memories instead?
