Banana muffin recipe!

I made some lovely banana muffins today! I had so many extra ripe bananas I thought instead of watch them rot & inevitably thrown out I'd put them to good use!
In our house everything in our freezer & cupboards are used up before we buy more food so why not our fruit too? :)




You will need:
1 egg
1/2 tsp vanilla extract
55g brown sugar
1 large very ripe! Banana (well mashed! I used a potato masher)
55ml sunflower oil 
85g plain flour (or wholemeal!) 
1/2tsp baking powder
1/2tsp bicarbonate soda

Optional:
1/2 tsp ground cinnamon. (We added cinnamon as we're fans of it in our house!)

Now what?:
1) preheat your oven to around 180 degrees Celsius or I think gas mark 4? 
These will make 24 mini muffins or as you can see from my photo 10 decent sized ones... Anyway plop your muffin cases onto muffin tin, we have reusable ones but the disposable are of course fine too!

2) beat your egg, vanilla & the sugar together until mixed & thick

3) sift in the flour (you don't have to sift it!), baking powder, bicarbonate soda in & the cinnamon if your adding that

4) stir it all up until it's all combined & the add the mixture to your muffin cases  
Bake in oven for 12-14 mins until risen & has a light brown colour to the top, if you not sure if they're done put a cocktail stick or something like that through the muffin, if the instrument is clean, it's done! :D
